Leipäjuusto

Leipäjuusto (lit. 'bread cheese') or juustoleipä, which is also known in English as Finnish squeaky cheese, is a fresh cheese traditionally made from cow's beestings, rich milk from a cow that has recently calved. Reindeer or even goat milk can also be used. Commercially available versions are typically made from regular milk and they lack some colour and flavour because of this. The cheese originally comes from Ostrobothnia, Northern Finland and Kainuu.

Gruyère

Gruyère is a hard yellow cheese made from cow's milk, named after the town of Gruyères in Switzerland. Gruyère is sweet but slightly salty, with a flavor that varies widely with age. It is often described as creamy and nutty when young, becoming with age more assertive, earthy, and complex. When fully aged (five months to a year) it tends to have small holes and cracks which impart a slightly grainy mouthfeel.

Aged over 12 months, this hard, brittle cheese has a sharp flavor with balanced sweet and salty tones. Winchester Gouda is delicious by itself or grated over pasta - try it in place of cheddar in your next grilled cheese sandwich. Pair this cheese with Zinfandel.
